Sources and credits

This page gathers all the sources behind Senza Glutine Torino: where the texts on coeliac disease, the data on places and events, the photos, the video and the tools used to build the site come from.

Citing sources is a matter of fairness towards the people who produced the information, photos and videos; of respecting licences, which for Creative Commons photos require the author, the licence and any changes to be stated; and of verifiability: every piece of data on health, places and events links to a page you can open and check for yourself.

We are not doctors, nor an official body. That is why we prefer institutional sources such as the Ministero della Salute (Italian Ministry of Health), the Istituto Superiore di Sanità, the Regione Piemonte and the ASL Città di Torino local health authority, together with AIC, the Italian Coeliac Association, and for every place we compare several independent sources. If you find out-of-date information or a link that does not work, let us know using the form.

Most of our sources are official Italian-language pages: links to pages in Italian say ‘in Italian’ in their tooltip.

Content sources

The information on coeliac disease, on the rules for eating out and on the services for people with coeliac disease in Piedmont comes from public bodies, the Istituto Superiore di Sanità (the Italian National Institute of Health), the law and the Associazione Italiana Celiachia. For each source, the table shows who publishes it, what type of source it is and what we took from it. Source titles and publishers are given in their original Italian.

The Ministry of Health figures are reported exactly as published, without rounding or reworking, as the note on reproducing the data of the Report to Parliament requires. The salute.gov.it pages sometimes show an automatic security check first: with a normal browser the page opens anyway.

Places and events

For every place and every event we started from the official sources: the place's website or social media channels, the pages of AIC and AIC Piemonte, the organiser's website. Then we compared every piece of data (address, membership of the AFC programme, gluten-free offer, dates) with at least one second source: gluten-free guides and blogs, recent reviews, apps such as Gluto.

When the sources disagreed, for example on the street number or the opening hours, we followed the website of the place or of AIC. If a place's membership of the AFC programme is only reported by third-party sources, we say so. The official list of AFC places is only on the website of AIC and of some of its local branches: we do not copy it, but for each place we cite the public page that shows its membership.

The name of each place and each event links to its official website or, if it has none, to its official social media channel. All the data was verified on 11 October 2026, but menus, opening hours and procedures change: always check with the place before you go and, for certification, check the AIC Mobile app.

We left out of the guide:

  • places that have closed or show no evidence of recent activity;
  • places outside the municipality of Turin, for example in Rivoli or Venaria Reale;
  • gluten-free products made alongside gluten-containing ones, with no information on separate kitchens or AIC membership;
  • events with only one source, those outside Turin and those held only online.

Announced by AIC Piemonte as a new AFC place on 23 May 2025; it uses only gluten-free dough.

Images

The photos on the site are freely licensed images taken from Wikimedia Commons. We only resized them, to 1600 pixels on the long side, with no cropping or retouching. The CC BY and BY-SA licences require us to credit the author, link to the licence and state the changes: we do this in this table and in the caption of each photo.

They are mood photos: none of them shows a gluten-free product or place, and only those of Piazza San Carlo and of the 2016 Salone del Gusto in Piazza Castello were taken in Turin. The pizza was photographed in Chiang Mai, Thailand, the gelato in Syracuse and the restaurant dining room in Castel Rozzone, in the province of Bergamo; the photo of the woman reading a label is in the public domain, as is the one of the thank-you card, which its author released under the CC0 dedication.

All the photos were resized without cropping. Under the BY-SA (‘ShareAlike’) licences, modified versions also remain under the same licence; the clause applies only to those photos, not to the rest of the site. For the photo of Piazza San Carlo, which is offered under several licences, we chose CC BY-SA 4.0. The thumbnails in this table are copies of the same photos reduced to 240 pixels wide, under the same licence as the original.

The logo and the four category icons, on the other hand, were created for this project in SVG format, like the decorative background of the home page: they do not come from external sources and have no licences to credit. The site does not reproduce AIC's Spiga Barrata mark (the ‘crossed grain’ symbol).

Video

In the guide we have embedded a video from a public health authority, in privacy-enhanced mode (youtube-nocookie.com domain). Next to the video, on the same page, there is a written summary of what it says.

Why we chose it
It comes from the official channel of the Ferrara health authorities and was published for the Settimana della Celiachia 2025, promoted together with AIC Emilia-Romagna. In less than five minutes it covers a balanced diet, eating out safely and official inspections of gluten-free places, and it does not promote any products or brands.

Tools and libraries

The site is hand-written in HTML and CSS, with a single stylesheet. For the grid, menu and components we use Bootstrap, loaded from the jsDelivr CDN.

We do not use analytics tools or advertising: the only external resources loaded by the pages are those listed above.

Legal notes

Senza Glutine Torino is a student project created for the Web Design exam at the Università di Torino. It is not an official service and has no connection with the places mentioned, nor with AIC or AIC Piemonte: the names and trademarks of the places belong to their respective owners.

The Spiga Barrata is a registered trademark of AIC: we only describe it in words and do not reproduce its logo. The health information is general and does not replace the advice of your doctor or dietitian.
